1/4 cup finely chopped green onions

1/4 cup shredded carrots

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon curry powder

1 tablespoon soy sauce

1 teaspoon fish sauce (omit for vegetarian)

Fresh cilantro, chopped (for garnish)

For the Soup:

4 cups chicken or vegetable broth

1 can (400 ml) coconut milk

1 tablespoon red curry paste

1 tablespoon soy sauce

1 cup mushrooms, sliced (shiitake or button)

1 bell pepper, sliced

1 tablespoon lime juice

Salt and pepper to taste

Instructions

Prepare the Dumpling Dough: In a bowl, mix the all-purpose flour and salt. Gradually add water and sesame oil, knead until smooth. Cover with a damp cloth and set aside.

Make the Filling: In a mixing bowl, combine ground chicken (or tofu), green onions, shredded carrots, minced garlic, grated ginger, curry powder, soy sauce, and fish sauce. Mix thoroughly until all ingredients are well incorporated.

Form the Dumplings: On a floured surface, roll out the dough until thin. Cut into 3-inch circles. Place a teaspoon of filling in the center of each circle. Fold and seal the edges, ensuring there are no air pockets. You can pleat the edges for a traditional look.

Prepare the Soup Base: In a large pot, heat a splash of oil over medium heat. Add mushrooms and sliced bell pepper, sauté for 3-4 minutes until slightly tender.

Add Broth and Coconut Milk: Pour in chicken or vegetable broth and coconut milk. Stir in red curry paste and soy sauce. Bring to a simmer.

Cook the Dumplings: Gently add the prepared dumplings into the simmering soup. Let them cook for 7-10 minutes until they rise to the surface and are cooked through.

Season the Soup: Once the dumplings are cooked, stir in lime juice, and season with salt and pepper to taste.

Serve: Ladle the soup into bowls, garnish with fresh cilantro, and serve hot. Enjoy your comforting bowl of Curry Dumpling Soup!
