3-4 lbs pork roast (shoulder or loin works well)

1 cup balsamic vinegar

1/2 cup chicken broth

1/4 cup honey

4 cloves garlic, minced

1 medium onion, sliced

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 teaspoon black pepper

1 teaspoon salt

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pork Roast: Pat the pork roast dry with paper towels and season generously with salt and pepper on all sides.

    Sear the Roast (Optional): In a large skillet, heat olive oil over medium-high heat. Sear the pork roast for 3-4 minutes on each side until browned. This step adds flavor but can be skipped if you're short on time.

      Mix the Sauce: In a bowl, combine balsamic vinegar, chicken broth, honey, minced garlic, soy sauce, Dijon mustard, thyme, rosemary, and a pinch of salt and pepper. Whisk until well blended.

        Layer the Ingredients: Place the sliced onion at the bottom of the slow cooker. Add the seared pork roast on top of the onions.

          Add the Sauce: Pour the balsamic mixture over the pork roast, ensuring it is well coated.

            Slow Cook: Cover the slow cooker with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and easily pulled apart with a fork.

              Serve: Once the pork is cooked, shred it gently with two forks right in the slow cooker. Mix it with the juices before serving.

                Garnish: Serve hot, garnished with freshly chopped parsley for a pop of color.
