Ingredients

8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/2 cup Parmesan cheese, grated

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for breadcrumbs)

Instructions

Cook the Macaroni: Boil a large pot of salted water. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour to make a roux. Cook for about 2 minutes until pale golden.

Add Milk: Gradually whisk in the whole milk, stirring constantly to avoid lumps. Continue stirring until the mixture thickens and bubbles. This may take about 5–7 minutes.

Add Cheese: Lower the heat to medium-low and add the shredded cheddar, Gruyère, and Parmesan cheese. Stir until completely melted and combined.

Flavor It: Stir in the garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste.

Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce and stir well to combine, making sure each piece of pasta is coated in the creamy goodness.

Prepare Topping (Optional): If using breadcrumbs, combine them with olive oil in a small bowl until coated.

Bake (Optional): If you like a baked version, preheat your oven to 350°F (175°C). Transfer the macaroni and cheese to a greased baking dish, sprinkle the breadcrumb mixture evenly on top, and bake for 20 minutes or until golden and bubbly.

Serve: Let it cool for a few minutes before serving. Enjoy your Ultimate Creamy Mac and Cheese!
