4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 tablespoons butter

Fresh chives or green onions for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes, vegetable (or chicken) broth, thyme, and smoked paprika to the pot. Bring the mixture to a boil.

        Reduce heat to low, cover, and let simmer for about 20-25 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, use a potato masher or immersion blender to blend the soup until you reach your desired consistency (smooth or chunky).

            Stir in the heavy cream and shredded cheddar cheese. Allow the soup to heat through, stirring gently until the cheese is melted.

              Taste and adjust seasoning with salt and pepper as desired.
