Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup unsalted butter, melted and slightly cooled

1 large egg

1 cup fresh blueberries (or frozen, if out of season)

½ cup buttermilk (or substitute with milk + 1/2 tsp lemon juice)

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 teaspoon vanilla extract

Optional: coarse sugar for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well with cooking spray.

Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt until evenly combined. Set aside.

Mix Wet Ingredients: In another bowl, whisk the melted butter and granulated sugar together until smooth. Add the egg, buttermilk, lemon zest, lemon juice, and vanilla extract. Mix until fully combined.

Combine Mixtures: Pour the wet mixture into the dry mixture, stirring gently with a spatula until just combined. Do not overmix; it’s okay if there are a few lumps.

Fold in Blueberries: Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full. If desired, sprinkle a little coarse sugar on top of each muffin for added texture.

Bake: Bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve warm or at room temperature, and enjoy the delightful combination of lemon and blueberry flavors!
