2 cups elbow macaroni

1 cup mayonnaise (preferably homemade)

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon granulated sugar

1 teaspoon celery salt

1/2 teaspoon black pepper

1 cup diced celery

1/2 cup diced red bell pepper

1/2 cup diced red onion

1 cup diced cucumbers

1/4 cup chopped fresh parsley

1/2 cup frozen peas (thawed)

3 hard-boiled eggs, chopped

Optional: 1/2 cup crumbled feta cheese or diced cheddar cheese

Instructions
 

Begin by cooking the elbow macaroni according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.

    In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, sugar, celery salt, and black pepper. Whisk until smooth and creamy.

      Add the cooled macaroni to the dressing mixture and stir well to coat.

        Fold in the diced celery, red bell pepper, red onion, cucumbers, parsley, peas, and the chopped hard-boiled eggs. If you’re using feta or cheddar cheese, add that as well.

          Gently mix all the ingredients together until everything is well incorporated.

            Taste and adjust seasoning if necessary (you may want to add extra salt, pepper, or vinegar).

              Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to let the flavors meld together.

                Serve chilled as a side dish or a refreshing main dish on a warm day.
