Ingredients

2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice

1 tbsp cornstarch

1 package (14 oz) of refrigerated pie crusts (or homemade)

1 egg, beaten (for egg wash)

1 tbsp milk (for egg wash)

Granulated sugar (for sprinkling)

Optional: Pinch of cayenne pepper for a spicy kick

Instructions

Prepare the Apples: In a large bowl, combine diced apples, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and cayenne pepper (if using). Gently mix until apples are well coated. Let the mixture sit for about 10-15 minutes to allow the flavors to meld.

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Roll Out the Dough: If using homemade pie crust, roll it out on a lightly floured surface. If using store-bought, roll it out slightly to make it easier to work with.

Cut the Dough: Using a round cutter (about 4-5 inches in diameter), cut circles from the dough. Gather the scraps and re-roll as needed.

Assemble the Hand Pies: Place a tablespoon of the apple filling in the center of each dough circle. Be careful not to overfill. Fold the dough over to create a half-moon shape. Press the edges to seal and then crimp with a fork for extra security.

Prepare for Baking: In a small bowl, whisk together the beaten egg and milk. Brush the egg wash on top of each hand pie and sprinkle with a little granulated sugar for sweetness and texture.

Bake: Transfer the hand pies to the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.

Cool and Serve: Allow the hand pies to cool slightly on a wire rack before serving. Enjoy them warm, or let them cool completely for a delightful snack!
