4 ripe peaches, peeled and diced

1/2 cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

1 cup all-purpose flour

1/4 cup brown sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

8 sugar cones

Whipped cream or vanilla ice cream for serving (optional)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Peaches: In a mixing bowl, combine diced peaches, granulated sugar, ground cinnamon, lemon juice, and cornstarch. Toss until peaches are well coated. Set aside to let the mixture sit for 15 minutes.

      Make Batter: In another mixing bowl, whisk together flour, brown sugar, baking powder, and salt. In a separate bowl, mix milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

        Fill Cones: Take the sugar cones and, using a spoon, carefully fill each cone with a layer of the peach mixture. Top each filled cone with a scoop of the batter until they are about three-quarters full.

          Bake: Place the filled cones upright in a muffin tin to keep them stable. Bake in the preheated oven for about 25-30 minutes or until the batter has risen and is golden brown on top.

            Cool: Once baked, allow the cones to cool for about 10 minutes before removing them from the muffin tin.
