For the Brownie Layer:

1/2 cup unsalted butter (1 stick), melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Cookie Layer:

1/2 cup unsalted butter (1 stick), softened

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips

1/2 cup mini peanut butter cups (cut in half)

Instructions

Prepare the Brownies:

    - Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.

      - In a mixing bowl, combine melted butter and granulated sugar. Mix until well combined.

        - Add in the eggs and vanilla extract, whisking until smooth.

          - Sift in the cocoa powder, flour, salt, and baking powder. Mix gently until no dry flour remains.

            - Pour the brownie batter into the prepared baking pan and spread evenly. Set aside.

              Make the Cookie Dough:

                - In another bowl, beat together softened butter, brown sugar, and granulated sugar until creamy.

                  - Add the egg and vanilla extract, mixing until fully combined.

                    - In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.

                      - Stir in the chocolate chips and half of the mini peanut butter cups.

                        Assemble the Brookies:

                          - Drop spoonfuls of the cookie dough over the brownie batter, using a rubber spatula to spread it evenly.

                            - Gently press the remaining mini peanut butter cups into the cookie layer, pushing them slightly into the dough for extra indulgence.

                              Bake:

                                - Place the assembled layers in the preheated oven and bake for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).

                                  - Once baked, remove from the oven and allow to cool in the pan for at least 15 minutes before slicing into squares.

                                    Serve and Enjoy:

                                      - Serve the warm brookies on their own or with a scoop of vanilla ice cream for an extra treat. Enjoy the gooey brownie, chewy cookie, and bursts of peanut butter goodness!
