Ingredients
  

1 cup all-purpose flour

½ teaspoon baking soda

½ teaspoon cream of tartar

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup white chocolate chips

½ teaspoon cinnamon

¼ cup powdered sugar (for rolling)

¼ teaspoon cinnamon (for rolling)

Instructions
 

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a small bowl, whisk together flour, baking soda, cream of tartar, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        Beat in the egg and vanilla extract until well combined.

          Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.

            Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.

              Bake for 8-10 minutes, until the edges are golden but the centers are still soft. Allow them to cool completely on a wire rack.

                Once cooled, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.

                  Dip each cookie ball into the melted white chocolate, using a fork to lift them out and letting the excess drip off.

                    In a small bowl, mix together the powdered sugar and cinnamon. Roll the chocolate-coated truffles in this mixture for a snickerdoodle finish.

                      Place the truffles back on the baking sheet and refrigerate for at least 30 minutes until the chocolate sets.
