Butter is a pivotal ingredient in the creation of Better Than Anything Toffee, and using unsalted butter is essential for flavor control. Unsalted butter allows you to manage the salt content in your recipe, ensuring that the sweetness of the toffee shines without being overpowered by saltiness. The rich, creamy flavor of butter enhances the overall taste profile, while its fat content is crucial for achieving that smooth, melt-in-your-mouth texture that we all love in toffee. When melted, butter provides a luscious base for the sugars and other ingredients to meld together.

Ingredients

1 cup unsalted butter (2 sticks)

1 cup packed brown sugar

1 cup granulated sugar

1 cup heavy whipping cream

2 cups semisweet chocolate chips

1 cup chopped pecans (or nuts of choice)

1 teaspoon vanilla extract

1/2 teaspoon salt

Crushed toffee bits (for topping, optional)

Instructions

Prepare the Pan: Line a 9x13 inch baking dish with parchment paper or grease it lightly with butter.

Melt the Butter: In a medium saucepan over medium heat, melt the butter completely.

Create the Sugar Mixture: Once the butter is melted, add the brown sugar and granulated sugar to the saucepan. Stir continuously until the mixture is fully combined and starts to bubble.

Add Cream and Cook: Gradually pour in the heavy whipping cream while stirring, then bring the mixture to a boil. Continue cooking for about 5-7 minutes, stirring constantly, until the mixture thickens slightly.

Add Flavorings: Stir in the vanilla extract and salt. Cook for another minute, then remove from heat.

Pour into the Baking Dish: Carefully pour the hot toffee mixture into the prepared baking dish, spreading it evenly.

Sprinkle Chocolate Chips: Immediately sprinkle the semisweet chocolate chips over the hot toffee. Allow them to sit for a couple of minutes to melt.

Spread the Chocolate: Once the chocolate chips have softened, use a spatula to spread the chocolate evenly over the toffee layer.

Add Nuts: Sprinkle the chopped pecans over the chocolate layer, pressing them lightly into the chocolate to secure them.

Chill: Let the toffee cool at room temperature for about 30 minutes, then transfer to the refrigerator to firm up fully, about 1-2 hours.

Serve: Once set, lift the toffee out of the baking dish using the parchment paper edges. Cut into squares or bars, and if desired, sprinkle with crushed toffee bits for extra crunch.
