2 cups shredded birria beef (cooked and seasoned)

8 corn tortillas

1 cup birria broth (reserved from cooking the beef)

1 cup Oaxaca cheese (or mozzarella, shredded)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder (or to taste)

¼ cup fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Salt and pepper to taste

Optional: sliced radishes and avocado for garnish

Instructions
 

Prepare the Tortillas: Heat a dry skillet over medium heat. Lightly toast each corn tortilla for about 30 seconds on each side until pliable. Set aside on a plate covered with a kitchen towel to keep warm.

    Make the Filling: In a mixing bowl, combine the shredded birria beef with chopped onion, minced garlic, cumin, chili powder, and season with salt and pepper. Mix well to incorporate all flavors.

      Assemble the Enchiladas: Take a tortilla and place about 1/4 cup of the birria filling in the center. Top with a sprinkle of shredded Oaxaca cheese. Roll the tortilla tightly and place seam-side down in a baking dish. Repeat with the remaining tortillas until they are all filled.

        Add the Broth: Pour the reserved birria broth evenly over the enchiladas in the baking dish. Ensure the tortillas are well-coated with the broth to keep them moist while baking.

          Bake: Preheat your oven to 350°F (175°C). Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.

            Serve: Carefully remove the enchiladas from the oven. Garnish with fresh cilantro, and serve with lime wedges on the side. Optional toppings include sliced radishes and avocado for added freshness and texture.
