Ingredients
  

1 cup (200g) light brown sugar

1/2 cup (115g) unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 cup (130g) all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup (150g) Biscoff spread

1/2 cup (85g) chocolate chips or chopped white chocolate

1/4 cup (50g) crushed Biscoff cookies, for topping

Instructions
 

Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang to help lift the blondies out later.

    In a mixing bowl, whisk together the melted butter and brown sugar until smooth and well combined.

      Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

        In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

          Spoon half of the batter into the prepared pan and spread it evenly. Drop spoonfuls of Biscoff spread across the batter.

            Carefully spread the remaining batter on top of the Biscoff spread. Use a knife to create a swirl effect by gently running it through the top layer and Biscoff spread.

              Sprinkle chocolate chips and crushed Biscoff cookies evenly over the top.

                Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

                  Allow the blondies to cool in the pan for about 10 minutes, then use the parchment paper to lift them out onto a wire rack to cool completely before slicing.
