Ingredients

2 cups crushed biscuits (such as Graham crackers or digestive biscuits)

1/2 cup unsalted butter, melted

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

1/4 cup milk

Fresh berries (strawberries or blueberries) for garnish

Optional: Zest of 1 lemon for added flavor

Instructions

Prepare the Crust:

    - In a mixing bowl, combine the crushed biscuits and melted butter. Mix until the crumbs are evenly coated.

      - Press the mixture firmly into the bottom of a greased 9-inch round springform pan to create an even crust. Set aside.

        Make the Cream Cheese Filling:

          - In a large mixing bowl, beat the softened cream cheese using an electric mixer until creamy and smooth.

            - Gradually add the powdered sugar, mixing continuously for 2-3 minutes until well combined.

              - Add the vanilla extract and lemon zest (if using) and mix until incorporated.

                Whip the Cream:

                  - In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.

                    Combine and Chill:

                      - Pour the cream cheese mixture over the biscuit crust in the springform pan. Spread it evenly with a spatula.

                        - Drizzle the milk evenly over the top (this will enhance the flavor and moistness). Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight for best results.

                          Serve:

                            - Once set, carefully remove the sides of the springform pan. Slice the cake into wedges and garnish with fresh berries. Serve chilled and enjoy!
