Black Bean Mango Tacos

1 can (15 oz) black beans, rinsed and drained

1 ripe mango, diced

1 ripe avocado, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1 jalapeño pepper, seeded and finely chopped (optional, for spice)

1 cup corn (fresh or canned)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

Optional toppings: crumbled feta cheese, sour cream, hot sauce

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the black beans, diced mango, avocado, red onion, red bell pepper, jalapeño (if using), corn, and chopped cilantro.

    Season: Drizzle the olive oil and lime juice over the mixture. Sprinkle in the ground cumin, smoked paprika, salt, and pepper. Toss gently until all ingredients are well combined. Be careful not to mash the avocado too much.

      Warm the Tortillas: In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side, or until pliable. Keep them warm in a clean kitchen towel.
