500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, coarsely ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 teaspoon sesame oil

2 cloves garlic, minced

1-inch ginger, grated

1 bell pepper (any color), sliced

1 medium onion, sliced

2 tablespoons vegetable oil

1 tablespoon fresh cilantro, chopped (for garnish)

Cooked jasmine rice or noodles (for serving)

Instructions
 

Marinate the Chicken: In a bowl, mix the chicken pieces with soy sauce, oyster sauce, half of the ground black pepper, cornstarch, and sesame oil. Let it marinate for at least 30 minutes, preferably in the refrigerator for deeper flavor.

    Sauté Aromatics: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add minced garlic and grated ginger, sautéing until fragrant and lightly golden (about 30 seconds).

      Cook the Chicken: Add the marinated chicken to the skillet. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through.
