500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly crushed

1 tablespoon soy sauce (preferably low-sodium)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 medium onion, sliced

3 cloves garlic, minced

1-inch piece ginger, minced

1 bell pepper (red or green), sliced

2-3 green onions, chopped

Salt to taste

Optional: 1 teaspoon sesame oil for finishing

Marinate the Chicken: In a bowl, combine the chicken pieces with freshly crushed black pepper, soy sauce, oyster sauce, cornstarch, and a pinch of salt. Mix well and let it sit for at least 30 minutes to absorb flavors.

    Heat Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Ensure the oil is hot before adding the chicken.

      Cook the Chicken: Once the oil is hot, add the marinated chicken in a single layer. Let it sear for about 3-4 minutes without stirring, to get a nice color, then stir-fry for another 2-3 minutes until fully cooked. Remove the chicken from the pan and set aside.

        Sauté Aromatics: In the same skillet, add a little more oil if needed. Add the sliced onion, minced garlic, and minced ginger. Stir-fry for about 2 minutes until the onions become translucent and fragrant.

          Add Veggies: Add the sliced bell pepper and continue to stir-fry for another 2-3 minutes until they are slightly tender but still crisp.

            Combine Everything: Return the cooked chicken to the skillet with the vegetables. Toss everything together and allow the flavors to meld for about 2 minutes. If you want more heat, you can add more crushed black pepper at this stage.

              Finish and Serve: If desired, drizzle a teaspoon of sesame oil over the dish for extra flavor. Remove from heat, sprinkle with chopped green onions, and serve hot with steamed rice or noodles.
