Blackberry Pistachio Dream Bars

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon salt

1/2 cup unsalted butter, melted

For the blackberry filling:

2 cups fresh blackberries

1/3 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

Zest of 1 lemon

For the pistachio topping:

1/2 cup shelled pistachios, roughly chopped

1 teaspoon honey

1/4 teaspoon salt

For the creamy layer:

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup heavy cream

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal.

    Make the Crust: In a medium bowl, combine flour, granulated sugar, and salt. Pour in the melted butter and mix until crumbly. Press the mixture evenly into the bottom of the prepared pan. Bake for 15 minutes, or until lightly golden. Remove from the oven and let cool.

      Prepare the Blackberry Filling: In a medium saucepan over medium heat, combine the blackberries, sugar, lemon juice, cornstarch, and lemon zest. Cook for about 5–7 minutes, until the blackberries start to break down and the mixture begins to thicken. Remove from heat and set aside to cool slightly.

        Make the Creamy Layer: In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing well. Pour in the heavy cream and beat until the mixture is fluffy and well-combined.

          Assemble the Bars:

            - Pour the warm blackberry filling over the cooled crust, spreading it evenly.

              - Carefully spoon the cream cheese mixture over the blackberry layer, using a spatula to smooth the top.

                Add Pistachio Topping: In a small bowl, mix the chopped pistachios with honey and salt. Sprinkle this mixture evenly over the cream cheese layer.

                  Bake: Return the assembled bars to the oven and bake for an additional 20–25 minutes, until the edges are set and the center jiggles slightly. Keep an eye on it to avoid overbaking.

                    Cool and Chill: Once baked, allow the bars to cool at room temperature. Once cool, refrigerate for at least 2 hours to set fully.
