Ingredients

2 cups fresh blackberries

1 cup granulated sugar, divided

1 tablespoon freshly squeezed lemon juice

2 cups heavy cream

1 cup whole milk

1 vanilla bean, split and seeds scraped

1 teaspoon pure vanilla extract

Pinch of salt

Instructions

Prepare the Blackberry Mixture: In a medium saucepan, combine the fresh blackberries, 1/2 cup of sugar, and lemon juice. Cook over medium heat, stirring regularly, until the blackberries break down and the mixture becomes syrupy (about 10-15 minutes). Remove from heat and let it cool slightly.

Blend and Strain: Once the blackberry mixture has cooled, transfer it to a blender or food processor. Blend until smooth. For a smoother texture, strain the mixture through a fine-mesh sieve to remove seeds.

Make the Ice Cream Base: In a large bowl, whisk together the heavy cream, whole milk, the remaining 1/2 cup of sugar, the vanilla bean seeds, vanilla extract, and a pinch of salt until the sugar is completely dissolved.

Combine Flavors: Gently fold in the blackberry puree into the ice cream base until well combined. Feel free to leave some chunks of blackberries for added texture.

Chill: Cover the mixture and refrigerate for at least 2 hours, or until completely chilled.

Churn: Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, typically about 20-25 minutes.

Freeze: Transfer the churned ice cream into an airtight container and freeze for at least 4 hours or until firm.

Serve: Scoop the ice cream into bowls or cones and enjoy your homemade blackberry vanilla bean delight!
