1 lb firm white fish fillets (such as tilapia, catfish, or mahi-mahi)

2 tablespoons smoked paprika

1 tablespoon cayenne pepper

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

For the Chipotle-Lime Sauce:

1/2 cup sour cream

1 tablespoon mayonnaise

1-2 chipotle peppers in adobo sauce (adjust for heat)

1 tablespoon adobo sauce (from the can)

Juice of 1 lime

Salt to taste

For Assembly:

8 small corn tortillas

1 cup shredded red cabbage

1 avocado, sliced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Prepare the Seasoning: In a small bowl, combine the smoked paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well to create the blackening seasoning.

    Season the Fish: Pat the fish fillets dry with paper towels. Rub the olive oil over the fillets, then generously coat them with the blackening seasoning on both sides.

      Make the Chipotle-Lime Sauce: In a food processor or blender, combine the sour cream, mayonnaise, chipotle peppers, adobo sauce, lime juice, and a pinch of salt. Blend until smooth and well combined. Taste and adjust seasoning if necessary. Set aside.

        Cook the Fish: Heat a large skillet (preferably cast iron) over medium-high heat until it's very hot.
