Ingredients

1 lb (450g) beef sirloin, thinly sliced

2 cups fresh baby spinach

1 cup mixed salad greens (arugula, romaine, etc.)

1 cup fresh blueberries

1/2 avocado, sliced

1/4 cup crumbled feta cheese

1/4 cup walnuts, roughly chopped

1/4 red onion, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

Instructions

Cook the Beef: In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the sliced beef. Season with salt and pepper. Cook for about 3-4 minutes on each side until browned and cooked to your liking. Remove from heat and let it rest for a few minutes.

Prepare the Dressing: In a small bowl, whisk together the remaining tablespoon of olive oil, balsamic vinegar, honey, and a pinch of salt and pepper. Set aside.

Assemble the Salad: In a large mixing bowl, combine the baby spinach, mixed salad greens, blueberries, sliced avocado, crumbled feta cheese, walnuts, and red onion.

Add the Beef: Once the beef has rested, slice it into bite-sized pieces and add it to the salad mixture.

Dress the Salad: Drizzle the dressing over the salad and toss gently to combine all ingredients without bruising the delicate ingredients.

Serve: Divide the salad between two bowls or plates. Optionally, garnish with additional blueberries and feta if desired.
