Ingredients

For the Cookies:

1 cup all-purpose flour

1/2 cup rolled oats

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1 cup fresh blueberries

For the Streusel Topping:

1/3 cup all-purpose flour

1/4 cup brown sugar, packed

3 tablespoons unsalted butter, melted

1/2 teaspoon ground cinnamon

1/4 cup chopped pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Cookie Batter: In a mixing bowl, combine the flour, rolled oats, baking powder, baking soda, and salt. Set aside.

Mix Wet Ingredients: In a separate large bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy. Add the vanilla extract and the egg, mixing until well combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the fresh blueberries, being careful not to crush them.

Make the Streusel Topping: In a small bowl, mix together the flour, brown sugar, melted butter, ground cinnamon, and chopped pecans (if using) until crumbly.

Scoop and Assemble: Using a cookie scoop or tablespoon, drop rounded dough onto the prepared baking sheet, leaving space between each cookie. Sprinkle the streusel topping generously over each cookie.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.

Cool and Enjoy: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy these delightful Blueberry Muffin Cookies with a cup of tea or coffee!
