1 sheet of puff pastry (thawed)

1 cup fresh blueberries (washed and drained)

1 tablespoon sugar

1 teaspoon lemon juice

1 egg (beaten for egg wash)

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons cream cheese (softened)

Instructions
 

Prepare the Pastry:

    - Preheat your oven to 400°F (200°C).

      - Roll out the puff pastry on a lightly floured surface to smooth out any creases. Cut the pastry into 2-inch wide strips.

        - Using a sharp knife, cut a hole in the center of half of the strips to create a ring shape.

          Prepare the Blueberries:

            - In a bowl, toss the fresh blueberries with sugar and lemon juice. This will help release their juices and soften them slightly.

              Assemble the Rings:

                - Place the whole puff pastry strips on a baking sheet lined with parchment paper.

                  - Brush the edges with the beaten egg wash for a golden finish.

                    - Place the ring-shaped pastry pieces on top, slightly offset, making sure they are sealed at the ends to avoid puffing apart during baking.

                      Add the Blueberries:

                        - Scatter the sugared blueberries inside the ring area of each pastry.

                          Bake:

                            - Bake the assembled pastry rings in the preheated oven for 15–18 minutes or until they are golden brown and puffed.

                              Make the Vanilla Cream Filling:

                                - While the pastry is baking, prepare the vanilla cream. In a mixing bowl, combine heavy whipping cream, powdered sugar, vanilla extract, and cream cheese.

                                  - Whip with an electric mixer until soft peaks form. Be careful not to over-whip.

                                    Cool and Fill:

                                        - After they are completely cool, use a piping bag or a spoon to fill each pastry ring with the vanilla cream filling.
