Ingredients

4 ripe peaches, pitted and sliced

1/4 cup unsalted butter

3/4 cup brown sugar

1/4 cup bourbon

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup buttermilk

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.

Prepare the Peach Topping: In a skillet over medium heat, melt the butter. Add the brown sugar and bourbon, stirring until combined and slightly bubbly. Remove from heat. Arrange the sliced peaches neatly in the bottom of the prepared cake pan, then pour the bourbon mixture over the peaches, ensuring they are well coated.

Make the Cake Batter: In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. In another bowl, beat the granulated sugar and egg together until light and fluffy. Stir in the vanilla and buttermilk until combined.

Combine Mixtures: Gradually add the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix, as this could affect the texture.

Assemble the Cake: Pour the cake batter over the peach topping in the pan, spreading it evenly.

Bake: Place the cake in the preheated oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool and Flip: Allow the cake to cool in the pan for about 10 minutes. Carefully run a knife around the edges to loosen it. Invert onto a serving plate to reveal the irresistible peach topping.

Serve: Cut into slices and serve warm or at room temperature, optionally garnished with whipped cream or a scoop of vanilla ice cream.
