1 cup pitted, chopped dates

1 cup water

1 teaspoon baking soda

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

For the Bourbon Pecan Sauce:

1/2 cup unsalted butter

1 cup brown sugar, packed

1/2 cup heavy cream

1/4 cup bourbon

1 cup pecans, chopped

A pinch of salt

For Garnishing:

Whipped cream or vanilla ice cream

Additional chopped pecans

Prep the Dates: In a small saucepan, combine the chopped dates and water. Bring to a gentle boil, then remove from heat and stir in the baking soda. Let it sit for about 10-15 minutes until slightly thickened and softened.

    Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 3-5 minutes using an electric mixer.

      Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.

        Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, and salt.

          Mix Everything Together: Gradually fold the dry ingredients into the butter mixture, alternating with the date mixture. Be careful not to over-mix.

            Prepare the Baking Dish: Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment paper for easy removal.
