6 large flour tortillas

8 large eggs

1 cup shredded cheese (cheddar or Mexican blend)

1 cup cooked and crumbled breakfast sausage or diced ham

1 cup cooked and diced potatoes (hash browns or roasted)

½ bell pepper, diced (any color)

½ onion, diced

1 tsp garlic powder

½ tsp paprika

Salt and pepper to taste

Fresh cilantro, chopped (optional for garnish)

Salsa or hot sauce (for serving)

Instructions
 

Cook the Vegetables: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and bell pepper. Sauté until translucent, about 4-5 minutes.

    Scramble the Eggs: In a bowl, whisk together the eggs, garlic powder, paprika, salt, and pepper. Pour the egg mixture into the skillet with the vegetables. Stir and cook until the eggs are just set, about 3-4 minutes.

      Add the Meat and Potatoes: Stir in the cooked sausage or ham and the diced potatoes. Cook for an additional 2-3 minutes until everything is heated through. Remove from heat.

        Assemble the Burritos: Lay a tortilla flat and place about ¾ cup of the egg mixture in the center. Sprinkle with shredded cheese and fresh cilantro if using. Fold in the sides and roll up tightly from the bottom to encase the filling, creating a burrito.

          Wrap and Freeze: Place each burrito on a piece of parchment paper or aluminum foil. Wrap tightly. Label and place in a freezer-safe bag or container. Repeat until all burritos are assembled.

            To Serve: When ready to eat, remove a burrito from the freezer and thaw in the refrigerator overnight. Microwave for 2-3 minutes or bake in a preheated oven at 350°F (175°C) for 20-25 minutes until hot. Serve warm with salsa or hot sauce on the side.
