2 medium sweet potatoes

4 large eggs

1/4 cup milk (or plant-based alternative)

1/2 teaspoon cinnamon

1 tablespoon maple syrup (plus extra for drizzling)

1/4 teaspoon nutmeg

Salt and pepper to taste

1 avocado, sliced

Fresh cilantro leaves for garnish (optional)

Cooking oil or butter for frying

Prep the Sweet Potatoes: Begin by washing and scrubbing the sweet potatoes to remove any dirt. Pierce them several times with a fork and microwave on high for about 5-8 minutes, until fork-tender. Alternatively, you can bake them in an oven at 400°F (200°C) for about 45 minutes.

    Scramble the Eggs: While the sweet potatoes are cooking, heat a non-stick skillet over medium heat with a little cooking oil or butter. In a bowl, whisk together the eggs, milk, cinnamon, maple syrup, nutmeg, salt, and pepper until fully combined. Pour the mixture into the skillet and cook, stirring gently, until the eggs are just set but still creamy (about 3-4 minutes). Remove from heat.
