Brown Butter Iced Oatmeal Cookies

1 cup unsalted butter (2 sticks)

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

3 cups old-fashioned rolled oats

1/2 teaspoon cinnamon (optional)

For the Icing:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Brown the Butter: In a saucepan, melt the unsalted butter over medium heat. Continue cooking, stirring frequently, until it turns golden brown and has a nutty aroma. Be careful not to burn it. Remove from heat and let it cool slightly.

    Combine Sugars: In a large mixing bowl, combine the brown sugar and granulated sugar. Pour in the warm brown butter and mix until well combined.

      Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon (if using).
