2 lbs Yukon Gold potatoes, peeled and cubed

1/2 cup unsalted butter

1/4 cup fresh sage leaves, chopped

1/2 cup heavy cream

1/2 cup whole milk

Salt, to taste

Freshly ground black pepper, to taste

Optional: a sprinkle of smoked paprika for garnish

Instructions
 

Cook the Potatoes: Place the cubed Yukon Gold potatoes in a large pot and cover with cold water. Add a generous pinch of salt, then bring to a boil over high heat. Once boiling, reduce the heat to medium and let simmer for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork. Drain well.

    Prepare the Brown Butter: In a small skillet over medium heat, add the unsalted butter. Once it’s melted, add the chopped sage leaves. Continue to cook, stirring frequently, until the butter turns a golden-brown color and has a nutty aroma, approximately 5-7 minutes. Be careful not to burn the butter.

      Mash the Potatoes: Return the drained potatoes to the pot, add the brown butter and sage mixture, heavy cream, and whole milk. Using a potato masher (or a hand mixer for creamier potatoes), mash everything together until you reach your desired consistency.

        Season: Taste the mashed potatoes, then add salt and freshly ground black pepper to your liking. For an extra touch, add a sprinkle of smoked paprika for color and flavor.

          Serve: Transfer the mashed potatoes to a serving dish, and if desired, drizzle a bit of extra brown butter on top. Garnish with additional sage leaves or a sprinkle of paprika.
