1 loaf of brioche or challah bread, cut into 1-inch cubes

4 ripe bananas, sliced

6 large eggs

2 cups whole milk

1/2 cup brown sugar

1 tablespoon vanilla extract

2 teaspoons ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped pecans (optional)

1/4 cup maple syrup (for serving)

Powdered sugar (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or butter.

    Layer the Bread and Bananas: Place half of the bread cubes in the prepared baking dish. Layer half of the sliced bananas over the bread. Repeat with the remaining bread and bananas.

      Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

        Pour the Mixture: Pour the egg mixture evenly over the layered bread and bananas in the baking dish, gently pressing down to ensure the bread absorbs the liquid. If using, sprinkle the chopped pecans on top.

          Cover and Refrigerate: Cover the baking dish with plastic wrap and refrigerate for at least 2 hours, or overnight if you prefer for a more intense flavor.

            Bake the Casserole: Remove the casserole from the refrigerator and let it sit at room temperature for about 15 minutes. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the center is set.

              Serve: Allow to cool for a few minutes. Serve warm, drizzled with maple syrup and a dusting of powdered sugar, if desired.
