1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup almond milk (or any plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons unsalted butter (or vegan butter), melted

Fresh celery sticks and ranch dressing for serving

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: In a large mixing bowl, combine the flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until smooth; the batter should be thick enough to coat the cauliflower florets.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, making sure to coat them evenly. Shake off any excess batter and place them on the prepared baking sheet in a single layer.

        Bake: Bake the cauliflower in the preheated oven for about 20–25 minutes, or until they are golden brown and crispy, flipping them halfway through for even baking.

          Prepare the Buffalo Sauce: While the cauliflower is baking, mix the buffalo sauce and melted butter in a small bowl until well combined.

            Coat in Buffalo Sauce: Once the cauliflower is done baking, remove it from the oven and carefully toss the hot cauliflower in the buffalo sauce mixture until evenly coated.

              Final Bake: Return the coated cauliflower back to the baking sheet and put it in the oven for an additional 10 minutes. This step helps crisp them up even more.

                Serve: Remove the bites from the oven and let them cool slightly. Serve hot with fresh celery sticks and your favorite ranch dressing.
