Buffalo Cauliflower Wraps

1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water (or non-dairy milk for creaminess)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

4 whole wheat or gluten-free tortillas

1 cup fresh spinach leaves

1 avocado, sliced

½ cup shredded carrots

½ cup celery sticks, chopped

Optional: ranch or blue cheese dressing for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, mix together the flour, water (or non-dairy milk), garlic powder, onion powder, paprika, salt, and pepper until smooth. Add the cauliflower florets to the batter and toss them until all pieces are well coated.

      Bake the Cauliflower: Spread the coated cauliflower evenly on the prepared baking sheet. Bake in the preheated oven for about 25 minutes, or until the florets are golden brown and crispy, flipping halfway through.

        Toss with Buffalo Sauce: Once the cauliflower is done, transfer it to a large bowl and pour the buffalo sauce over it. Gently toss to coat all the florets well.

          Assemble the Wraps: Take a tortilla and lay down a handful of fresh spinach leaves at the bottom. Add a few pieces of buffalo cauliflower, followed by sliced avocado, shredded carrots, and chopped celery.
