1 cup cooked and shredded chicken (preferably from a rotisserie)

1/2 cup buffalo sauce (adjust to taste)

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

Cooking spray or oil for frying

Optional: ranch or blue cheese dressing for dipping

Instructions
 

Prepare the Mixture: In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, and half of the mozzarella cheese. Mix until well combined and set aside.

    Form the Sticks: Take a small amount of the chicken mixture (about 2 tablespoons) and shape it into a stick. Repeat until all the mixture is shaped. You should have about 12-15 sticks.

      Setup Breading Station: Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, garlic powder, onion powder, and salt.

        Bread the Sticks: Dredge each chicken stick in flour, then dip into the beaten eggs, and finally coat with the panko mixture. Make sure each stick is well coated and set aside on a plate.

          Set Up for Frying: Heat oil in a deep fryer or a large skillet over medium-high heat. If you're using oil, it should be about 350°F (175°C).

            Fry the Sticks: Working in batches, carefully place the breaded sticks in the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and let drain on a paper towel-lined plate.

              Add Remaining Cheese: For an extra cheesy experience, sprinkle the remaining mozzarella cheese on top of the sticks as soon as they come out of the oil. Let them melt for a minute before serving.

                Serve: Arrange the Buffalo Chicken Mozzarella Sticks on a platter and serve immediately with ranch or blue cheese dressing on the side.
