Ingredients

2 cups cooked and shredded chicken

1/2 cup buffalo sauce (adjust to taste)

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1 package pizza dough (store-bought or homemade)

1/4 cup blue cheese crumbles (optional)

1 egg, beaten (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Chicken Filling: In a large bowl, combine the shredded chicken, buffalo sauce, mozzarella cheese, cream cheese, garlic powder, onion powder, and paprika. Mix until well combined and creamy. If you like, add blue cheese crumbles for extra flavor.

Prepare Pizza Dough: Roll out the pizza dough on a floured surface to about 1/8 inch thick. Using a pizza cutter or knife, cut the dough into squares, approximately 4x4 inches.

Fill the Pockets: Spoon a generous tablespoon of the buffalo chicken mixture onto the center of each square. Be careful not to overfill, as this can cause them to burst during baking.

Seal the Edges: Fold the dough square over to form a triangle. Press the edges firmly to seal, then use a fork to crimp the edges for an extra seal and decorative touch.

Apply Egg Wash: Brush the tops of the pizza pockets with the beaten egg to give them a golden-brown finish while baking.

Bake: Place the filled pizza pockets on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until they are golden brown and cooked through.

Serve: Allow the pizza pockets to cool slightly before serving. Garnish with chopped parsley for a pop of color. Serve with additional buffalo sauce or ranch dressing for dipping.

Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 6-8 pockets
