4 lobster tails (6-8 oz each)

1 cup unsalted butter

1 cup water

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon smoked paprika

1 teaspoon fresh thyme leaves

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Lobster Tails: Using kitchen scissors, carefully cut down the center of the lobster shell, from the thick end to the tail, without cutting through the actual tail. Gently pull the meat from the shell and lay it over the top. This is called deveining the lobster tail and will help it cook evenly.

    Melt the Butter: In a medium saucepan, combine the unsalted butter and water. Heat over medium-low heat until the butter has completely melted and forms a nice emulsion.

      Infuse Flavor: Add the minced garlic, lemon juice, smoked paprika, fresh thyme, salt, and pepper into the melted butter mixture. Stir well to combine and let it simmer for about 5 minutes to allow the flavors to meld.

        Poach the Lobster Tails: Carefully place the prepared lobster tails into the butter mixture. Gently spoon the butter over the lobster meat to ensure it's fully coated. Poach the lobster tails in the butter for about 8-10 minutes, or until the meat is opaque and cooked through. The internal temperature should reach 140°F (60°C).

          Serve: Once cooked, remove the lobster tails from the butter and place them on a serving platter. Drizzle some of the poaching butter over the top, garnish with chopped chives, and serve with lemon wedges on the side.
