Butternut Squash & Bacon Flatbread

Ingredients
  

1 medium butternut squash, peeled and diced into 1-inch cubes

4 slices of bacon, chopped into small pieces

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon ground cinnamon

1 flatbread or pizza dough (store-bought or homemade)

1 cup fontina cheese, shredded

¼ cup fresh mozzarella cheese, shredded

2 tablespoons fresh sage leaves, chopped (or 1 teaspoon dried)

¼ cup balsamic glaze for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Butternut Squash: In a large bowl, combine the diced butternut squash with olive oil, salt, black pepper, and ground cinnamon. Toss well to ensure all pieces are evenly coated.

      Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to remove the bacon pieces and drain them on a plate lined with paper towels, leaving the rendered fat in the skillet.

        Sauté the Squash: In the same skillet with the bacon fat, add the seasoned butternut squash. Sauté for about 10-12 minutes, or until the squash is tender and slightly caramelized. Remove from heat.

          Assemble the Flatbread: On a baking sheet or pizza stone, place the flatbread or rolled-out pizza dough. Spread an even layer of fontina cheese over the surface of the flatbread.

            Add Toppings: Evenly distribute the sautéed butternut squash over the cheese, and then sprinkle the crispy bacon on top. Add the shredded mozzarella and chopped sage leaves for extra flavor.

              Bake: Place the assembled flatbread in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.

                Drizzle and Serve: Once baked, remove from the oven and drizzle with balsamic glaze. Allow to cool for a couple of minutes, then slice into wedges and enjoy!
