Ingredients

4 ripe bananas, sliced

1 box (3.4 oz) butterscotch instant pudding mix

2 cups whole milk

1 teaspoon vanilla extract

1 cup heavy whipping cream

½ cup powdered sugar

1 cup crushed Nilla wafers

½ cup butterscotch chips

Optional: toasted coconut flakes for garnish

Instructions

Prepare the Pudding: In a mixing bowl, whisk together the butterscotch instant pudding mix and whole milk until smooth. Add the vanilla extract and continue mixing for another minute, until slightly thickened.

Whip the Cream: In a separate large bowl, use an electric mixer to whip the heavy cream until soft peaks form. Gradually add the powdered sugar and whip until stiff peaks form.

Combine Mixtures: Gently fold half of the whipped cream into the butterscotch pudding mixture until just combined. This will lighten up the pudding.

Layer the Pudding: In a trifle dish or a large glass bowl, start by layering the bottom with a portion of crushed Nilla wafers. Add a layer of the butterscotch pudding mixture followed by a layer of banana slices. Repeat the process, layering the remaining ingredients (reserving some slices of banana and wafers for garnish) until the dish is nearly full.

Top with Whipped Cream: Finish your layers with the remaining whipped cream on top and sprinkle with crushed Nilla wafers and butterscotch chips. If desired, add toasted coconut flakes for an extra layer of flavor and texture.

Chill: Cover the pudding with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the pudding to set.

Serve: When ready to serve, carefully uncover, garnish with reserved banana slices and additional butterscotch chips if desired. Enjoy this delightful twist on classic Southern banana pudding!
