Ingredients

1 ¾ cups all-purpose flour

1 ½ tsp baking powder

½ tsp baking soda

¼ tsp salt

¾ cup unsalted butter, softened

1 cup packed brown sugar

½ cup granulated sugar

3 large eggs

2 tsp vanilla extract

1 cup buttermilk

1 cup butterscotch chips

1 cup crushed toffee bits (like Heath bars)

½ cup chopped nuts (optional, such as walnuts or pecans)

1 cup heavy cream (for frosting)

1 cup powdered sugar (for frosting)

1 tsp vanilla extract (for frosting)

Instructions

Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.

Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter & Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy (about 4 minutes).

Add Eggs: Beat in the eggs one at a time, incorporating each fully before adding the next. Add in the vanilla extract.

Combine Dry and Wet: Gradually add the dry flour mixture to the wet ingredients, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined.

Fold in Mix-ins: Gently fold in the butterscotch chips, crushed toffee bits, and nuts (if using) into the batter.

Bake: Divide the batter evenly between the prepared cake pans. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Make Frosting: In a bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assemble Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of whipped frosting on top, then place the second layer on top. Use the remaining frosting to frost the top and sides of the cake.

Garnish: Top with additional butterscotch chips, crushed toffee bits, or nuts for decoration if desired.

Serve: Slice and serve your Butterscotch Crunch Cake to friends and family, and enjoy!
