1 lb fresh baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons unsalted butter

2 tablespoons honey

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Zest of 1 orange (optional, for extra flavor)

Instructions
 

Prep the Carrots: If using regular carrots, peel and cut them into uniform sticks. If using baby carrots, rinse them under cold water and set aside.

    Cook the Carrots: In a medium-size pot, bring salted water to a boil. Add the carrots and cook for 3-5 minutes, or until they are just tender but still crisp. Drain the carrots and set them aside.

      Make the Glaze: In a large skillet over medium heat, melt the butter. Once melted, add the honey and olive oil, stirring until fully combined.

        Season: Add salt, black pepper, and thyme to the skillet with the butter mixture. Stir well to combine.
