Ingredients
  

For the Shrimp:

1 lb large shrimp, peeled and deveined

1 tbsp Cajun seasoning

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 cup chicken broth

1/2 cup heavy cream

Juice of 1 lemon

Salt and pepper to taste

1 green onion, sliced (for garnish)

For the Grits:

1 cup stone-ground grits

4 cups water (or chicken broth for more flavor)

1 cup shredded sharp cheddar cheese

2 tbsp unsalted butter

Salt to taste

1/4 cup whole milk (optional for creaminess)

Instructions
 

Prepare the Grits:

    - In a medium saucepan, bring 4 cups of water (or chicken broth) to a rolling boil.

      - Slowly whisk in the stone-ground grits and reduce the heat to low.

        - Cook the grits, stirring frequently, for about 20-25 minutes until they are thick and creamy. Add salt to taste.

          - Once the grits are cooked, stir in the butter and cheddar cheese until melted and creamy. If desired, add whole milk for extra creaminess. Keep warm.

            Cook the Shrimp:

              - In a large skillet over medium heat, melt 4 tbsp of butter. When the butter is melted and bubbly, add the minced garlic. Sauté for about 1 minute until fragrant but not browned.

                - Add the shrimp to the skillet and sprinkle with Cajun seasoning, salt, and pepper. Cook for 2-3 minutes on one side until they begin to turn pink. Flip the shrimp.

                  - Pour in the chicken broth, and allow it to simmer for about 2 minutes to develop flavor.

                    - Stir in the heavy cream and lemon juice, cooking for an additional 1-2 minutes until the shrimp are cooked through and the sauce is slightly thickened. Adjust seasoning if necessary.

                      Serve:
