Cajun Sausage and Rice Skillet (One-Pan Dinner in 30 minutes!)

1 lb Andouille sausage, sliced

1 cup long-grain white rice

2 1/2 cups chicken broth

1 medium onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 tsp smoked paprika

1 tsp cayenne pepper (adjust for spice level)

1/2 tsp dried thyme

1/2 tsp dried oregano

1 bay leaf

2 green onions, chopped (for garnish)

2 tbsp olive oil

Salt and pepper to taste

Instructions
 

Heat the Oil: In a large skillet or pan over medium heat, add 2 tbsp of olive oil. Once hot, add the sliced Andouille sausage and cook until browned, about 4-5 minutes. Remove the sausage and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they start to soften. Add the minced garlic and cook for another 30 seconds until fragrant.

      Add Rice: Stir in the long-grain white rice, making sure to coat it with the oil and juices from the sausage and vegetables. Cook for about 2 minutes, stirring frequently to lightly toast the rice.

        Add Liquid and Spices: Pour in the chicken broth and add the drained diced tomatoes, smoked paprika, cayenne pepper, thyme, oregano, and bay leaf. Return the browned sausage to the skillet, and stir well to combine.

          Cook the Rice: Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 18-20 minutes or until the rice is tender and has absorbed the liquid. Stir occasionally to prevent sticking.

            Final Touches: Once the rice is cooked, remove the bay leaf and fluff the dish with a fork. Season with salt and pepper to taste.
