Cajun Shrimp Pasta

Ingredients
  

8 oz linguine or fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 tablespoon unsalted butter

3 cloves garlic, minced

1 small red bell pepper, diced

1 small green bell pepper, diced

1 cup cherry tomatoes, halved

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or fettuccine according to package instructions until al dente. Drain and set aside.

    Prepare the Shrimp: In a bowl, toss the shrimp with 1 tablespoon of Cajun seasoning until evenly coated.

      Sauté the Shrimp: In a large skillet over medium-high heat, heat the olive oil and butter. Once hot, add the seasoned shrimp and cook for about 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.

        Sauté the Veggies: In the same skillet, add the minced garlic and diced bell peppers. Sauté for 3-4 minutes until the peppers are tender. Add the cherry tomatoes and cook for an additional 2 minutes.

          Create the Sauce: Lower the heat to medium, then pour in the heavy cream. Stir in the remaining Cajun seasoning and simmer for about 2-3 minutes, allowing the sauce to thicken slightly.

            Combine: Add the cooked pasta and shrimp back to the skillet. Toss everything together until the pasta is evenly coated with the creamy sauce. Stir in the Parmesan cheese and adjust seasoning with salt, pepper, and lemon juice to taste.

              Serve: Divide the pasta among plates, garnish with chopped parsley, and add more grated Parmesan if desired.
