Cajun Shrimp with Bell Peppers and Corn

Ingredients
  

1 pound large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup corn (fresh or frozen)

3 cloves garlic, minced

1 small onion, diced

1 tablespoon Worcestershire sauce

1 tablespoon fresh lemon juice

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Shrimp: In a medium bowl, toss the peeled and deveined shrimp with the Cajun seasoning until evenly coated. Set aside to marinate for about 15 minutes.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 2 minutes until it becomes translucent.

      Add Bell Peppers and Corn: Stir in the sliced red and yellow bell peppers and cook for an additional 3-4 minutes until the peppers are slightly softened. Then, add the corn and cook for another 2 minutes.

        Incorporate Garlic: Add the minced garlic to the skillet and stir continuously for about 30 seconds until fragrant.

          Cook the Shrimp: Push the vegetables to the sides of the skillet and add the marinated shrimp to the center. Cook for 2-3 minutes without stirring until the shrimp begin to turn pink. Then, stir everything together and add the Worcestershire sauce and lemon juice. Cook for another 2-3 minutes until shrimp are fully cooked and opaque.

            Season and Garnish: Taste and season with salt and pepper as needed. Remove from heat and garnish with chopped fresh parsley.

              Serve: Serve hot over rice or enjoy it as is for a delicious low-carb dish!
