4 medium sweet potatoes, peeled and cut into 1-inch cubes

1/2 cup unsalted butter

1 cup brown sugar, packed

1/2 cup maple syrup

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup toasted pecans or walnuts (optional)

1 teaspoon vanilla extract

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Sweet Potatoes: In a large pot, bring water to a boil. Add the sweet potato cubes and cook for about 8-10 minutes until fork-tender but not mushy. Drain and set aside.

      Make the Caramel Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, stir in the brown sugar, maple syrup, cinnamon, nutmeg, and salt. Cook for about 3-5 minutes until the mixture is bubbly and slightly thickened.

        Combine Sweet Potatoes and Sauce: In a large mixing bowl, gently toss the sweet potatoes with the caramel sauce and vanilla extract until evenly coated.

          Bake: Transfer the sweet potato mixture to a baking dish. If using, sprinkle the toasted pecans or walnuts over the top. Cover with aluminum foil and bake for 30 minutes.

            Finish Baking: After 30 minutes, remove the foil and bake for an additional 15-20 minutes, allowing the top to caramelize. You can baste the sweet potatoes with the sauce once or twice during this time for more flavor.

              Serve: Once done, remove from the oven and allow to cool slightly. Serve warm as a side dish or dessert.
