Ingredients
  

For the Crust:

1 ¾ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon

For the Cheesecake Filling:

3 (8-ounce) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 ½ cups diced apples (preferably Granny Smith)

1 teaspoon lemon juice

1 teaspoon ground cinnamon

For the Caramel Topping:

1 cup caramel sauce

½ cup chopped pecans or walnuts (optional)

Instructions
 

Prepare the Crust:

    - Preheat the oven to 325°F (165°C).

      - In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix well until crumbly.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then remove from the oven and let cool.

          Prepare the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

              - Gradually add the sugar and vanilla extract, mixing until well combined.

                - Add eggs one at a time, mixing just until incorporated; do not overbeat.

                  - In a separate bowl, toss the diced apples with lemon juice and cinnamon, then fold them gently into the cheesecake mixture.

                    Assemble and Bake:

                      - Pour the cheesecake filling over the cooled crust, spreading it evenly.

                        - Bake in the preheated oven for about 50-60 minutes, or until the center is set but slightly jiggly. The edges should be golden but the middle should not be completely firm.

                          - Turn off the oven and crack the door open, allowing the cheesecake to cool slowly in the oven for about 1 hour.

                            Chill the Cheesecake:

                              - Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.

                                Prepare the Caramel Topping:
