1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

½ cup sour cream

2 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

For the apple layer:

2 cups apples, peeled, cored, and diced (Granny Smith or Honeycrisp work great)

¼ cup brown sugar

½ tsp ground cinnamon

1 tbsp lemon juice

For the caramel drizzle:

½ cup caramel sauce (store-bought or homemade)

Sea salt (optional, for garnish)

Preheat the Oven: Preheat your oven to 325°F (163°C). Line a 9x13 inch baking dish with parchment paper, leaving extra hanging over the sides for easy removal later.

    Prepare the Crust: In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake for 10 minutes, then remove from the oven and let cool slightly.

      Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy, about 2-3 minutes. Add sour cream, eggs, vanilla extract, and ground cinnamon. Beat until fully combined and creamy, scraping down the sides of the bowl as necessary.

        Prepare the Apple Layer: In a separate bowl, mix the diced apples, brown sugar, ground cinnamon, and lemon juice until the apples are well coated. Set aside.
