Caramel Chocolate Coffee Cheesecake

For the crust:

1 ½ cups chocolate graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

¼ cup strong brewed coffee, cooled

½ cup unsweetened cocoa powder

1 cup caramel sauce (store-bought or homemade)

For the topping:

1 cup heavy whipping cream

¼ cup powdered sugar

½ teaspoon vanilla extract

Dark chocolate shavings (for garnish)

Additional caramel sauce (for drizzling)

Instructions
 

Prepare the crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine chocolate graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let cool.

    Make the filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy. Gradually add the granulated sugar and continue mixing until well combined.

      Add the eggs: Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract, cooled coffee, and cocoa powder. Beat until everything is fully combined and smooth.

        Layer the filling: Pour half of the cheesecake filling over the cooled crust. Drizzle half of the caramel sauce over the filling and use a knife to create swirls. Pour the remaining filling on top and repeat the drizzle and swirl with the remaining caramel sauce.

          Bake the cheesecake: Place the springform pan in the preheated oven and bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Once done, turn off the oven and crack the door open, allowing the cheesecake to cool slowly in the oven for about an hour.

            Chill: Remove the cheesecake from the oven and let it cool to room temperature. Then, refrigerate for at least 4 hours, preferably overnight.

              Prepare the topping: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form. Gently spread the whipped cream over the top of the chilled cheesecake.

                Garnish and serve: Sprinkle dark chocolate shavings across the top and drizzle with additional caramel sauce before slicing. Serve chilled and enjoy every delicious bite!
