1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

¼ cup freshly brewed espresso (cooled)

¼ cup sour cream

½ cup heavy cream

For the caramel drizzle:

½ cup caramel sauce (store-bought or homemade)

1 tsp sea salt (optional, for sprinkling on top)

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9x13 inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal later.

    Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until evenly combined. Press the mixture firmly into the bottom of the prepared baking pan. Bake in the preheated oven for 10 minutes, then remove and allow to cool slightly.

      Mix the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add in the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract, cooled espresso, sour cream, and heavy cream until completely combined and silky in texture.

        Bake the Cheesecake Bars: Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Bake at 325°F (160°C) for 30-35 minutes, or until the center is set but slightly jiggly. Remove from the oven and allow to cool at room temperature for about 1 hour.

          Chill: Once at room temperature, cover the pan and refrigerate for at least 4 hours, or overnight, until the cheesecake is firm.
