Carrot Cake Bars

2 cups grated carrots (about 4 medium carrots)

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 tsp vanilla extract

1 cup crushed pineapple, drained (optional)

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x13 inch baking dish with parchment paper, allowing some overhang for easy removal.

    Prepare Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

      Mix Sugars and Wet Ingredients: In another bowl, mix together the granulated sugar, brown sugar, and oil until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

        Combine Ingredients: Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix. Fold in the grated carrots, pineapple, nuts, and raisins if using.

          Bake the Bars: Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

            Cool and Slice: Allow the carrot cake bars to cool in the pan for about 10 minutes. Then, use the parchment overhang to lift the bars out and transfer them to a wire rack to cool completely. Once cool, slice into squares or rectangles.
