Carrot Cake Energy Balls

Ingredients
  

1 cup rolled oats

1/2 cup finely grated carrots (about 2 medium carrots)

1/2 cup almond butter (or any nut butter of choice)

1/4 cup maple syrup (or honey)

1/4 cup ground walnuts (or pecans)

1/4 cup shredded unsweetened coconut

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup golden raisins (or regular raisins)

Optional: 2 tablespoons chia seeds or flaxseed meal for added nutrition

Instructions
 

In a large mixing bowl, combine the rolled oats, grated carrots, almond butter, maple syrup, and vanilla extract. Mix thoroughly until you achieve a sticky consistency.

    Add in the ground walnuts, shredded coconut, ground cinnamon, nutmeg, and salt. Stir until all ingredients are evenly distributed.

      Fold in the golden raisins and chia seeds (if using) until well mixed.

        Refrigerate the mixture for about 30 minutes. This will help it firm up and make it easier to roll into balls.

          Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls with your hands. Place the formed energy balls onto a baking sheet lined with parchment paper.

            If desired, roll the energy balls in additional shredded coconut or crushed nuts for extra texture and flavor.

              Store the carrot cake energy balls in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
